And then Malbec, for that intense colour and extra broodiness. The wine is commendable for its balance, structure intensity and delicious length. Keep it hearty with braised pork and plum – and don’t be shy with the cinnamon. Or mushroom bourguignon (yes, without the meat) to highlight the brightness of the wine.
